This is a recipe for Tomato Salad that I first tasted at my brother’s place a few years ago & I’ve been making it ever since. Today I’m sharing the love. It’s a summer staple & in keeping with my food philosophy for this blog – a total cinch! In fact, it’s quite possible Jamie Oliver will include this one in his next cookbook venture – 2 Minute Meals. It takes only a few (more than 2) minutes to prepare so leave it until just before serving.
a whole bunch of tomatoes either standard garden variety or mix it up with an all-sorts arrangement – 1/2 spanish onion – juice of 1 or 2 limes – a big pinch of good quality salt – 1/2 bunch of fresh coriander
and do this with it:
Finely slice the onion and place on the bottom of your salad bowl. Cut/slice/chop the tomatoes and place into the bowl. Chop up your coriander & throw in on top. Sprinkle in your salt & squeeze in the juice of the lime. Mix it all up & check your seasoning before serving – maybe it’ll need another hit of lime or a bit more salt or even more coriander if you’re mad about it. I am.
Hard to believe that a salad without a drop of oil or vinegar in sight can taste this good, but it does…
