the cake you should cook…

Here is the recipe for the seriously easy and very delicious Chocolate Cake mentioned below.  I have had this recipe for years (taken from our local newspaper), so it’s well tested.
1 1/4 cups self-raising flour – 2tbsp cocoa –  1/2 tsp bi-carb soda –  pinch of salt –  1 1/4 cups caster sugar –  125g butter, plus some for greasing tin  – 1 cup milk  – 1/2 tsp vanilla essence –  2 eggs, lightly beaten

Lightly grease a deep 20cm square cake tin with melted butter, or just use baking paper to line the bottom and sides.  Sift flour, cocoa, bicarb and salt into a big bowl.  Stir in the sugar.  Mix melted butter with milk & vanilla essence.  Gradually pour liquid into sifted flour, beating until smooth, about 2 minutes.  Add eggs and continue to beat for 2 minutes more.  Pour cake mixture into prepped tin and smooth the top level.  Bake at 180C for approximately 1 hour or until cake is cooked through.  Cool in tin for a few minutes before turning out onto a wire rack to cool.  Ice as you like.
